When our friend and loyal listener Drew Persons, a model and photographer living in Thailand, came over to visit us, I just had to show him how to make Vietnamese spring rolls with a Western twist.

I want some! I’ll take a spring roll too.

I loved the part where Fausto was feeding Drew the pineapple… made me giggle.

The rolls looked kinda weird… all transparent and such (do Chinese restaurants use something different?); but the colour was very pleasing and the pineapple would just be orgasmic. Mmmmmmmm… pineapple.

Btw, If Drew’s taking offers, I’m submitting one ;)

DAMN now i’m starving for some spring rolls. i can’t eat em where i am now tho. :( but when i go home for my winter break imma gonna make me some.. i never knew they were that easy to make! thanks for the video! :D

Oh my God!!! I love the flowery decor on your plates :) And Fausto - forget about losing weight! That little belly of yours is so sweet and cute - just gorgeous!

The spring roll is easy, just put in whatever is in the house (for a salad). You can even mix fruit instead of vegetables and serve with a chocolate sauce.

SPRING ROLLS
1 cup chopped fresh baby spinach
1/2 cup shredded red cabbage
1/3 cup loosely cut basil (thai basil works fine and is much cheaper)
1 TBSP sesame seeds
1/4 cup shredded carros
1/4 cup shredded fresh beets

Vietnamese Spring Roll Rice Paper

Mix into a bowl and roll into wet rice paper sheets.

PINEAPPLE CHUTNEY
1 ripe pineapple, cut and pureed in blender
2 TBSP apple cider vinegar
1/8 tsp cayenne (to taste)
salt (to taste)
1-2 TBSP of raw sugar or dried cane juice

Boil under medium heat, uncovered until reduced.

Am I missing anything here?

Loved the video although QuickTime streaming seems a bit slower than You Tube’s flash video streaming (although that could just be my internet connection) - are you going to continue uploading to You Tube as well?

“First, you stuff the chicken with pineapple.” Priceless! You guys are both adorable.

Those rice wrappers make beautiful window ornaments, the way they filter the light… although they tend to curl after a bit due to humidity. I’ve never actually used them to make food, but now I’m inspired.

Try just making a salad and serving them with Peanut sauce, yummy!

Ooh - thanks for posting the recipe in text, Fausto - I was going to ask. Spring rolls are fun to make and eat. It’s also fun to put them in a pan with some hot oil and cook them a little - makes them more like egg rolls.

so strange, the night after I watched the video, I dreamt that I was eating tofu and loving it….lol…which is really bizarre as I hate the taste of tofu….

Opps forgot to say how much I enjoyed Drew’s interview. Was very interesting. And really enjoy seeing a little of video of guests. Makes people seem more real in a way. Good job on the videography Marc!
